A New Year and a Healthier You!

Homemade Cranberry Relish
There is always room for some cranberry relish now and not just for the holidays. I have created this recipe which I hope you will enjoy!
- 1, 12 oz bag of fresh whole cranberries, rinsed
- 1/4 cup of Tropicana® Orange Mango Juice
- 1/4-1/2 cup sugar, or sugar substitute, depending on your taste and how sweet you like it
- 1 tsp. of cinnamon, can adjust also to your taste
- Place all items in a medium sauce pot on low-medium heat and cook for 15-20 minutes or until the sauce thickens and cranberries have popped. You can also mash them slightly with your spoon to help aid this process.

No Knead InstaPot® Rosemary and Olive Oil Bread
This weekend seemed like the perfect opportunity to try a new bread recipe. I have had an InstaPot® for several years and have not really used it very much. This year! 2020! has been a year of trying new things. I have made my own jelly, canned pasta sauce, pickled jalapenos and made bread. This recipe sounded great and had some fresh rosemary at home. I would highly recommend to follow this recipe exactly and get a Dutch Oven. They really work the best and guarantee a toasty crust. Homemade Apple Sauce
This time of year brings us warm feelings of staying inside and cooking something comforting. I have made my own homemade apple sauce and love the results. You can use pretty much any type of apple you want. I happen to like Macintosh apples for this recipe.
- 6 Large apples, any type of your choosing
- 1/4-1/2 granulated sugar, can also use alternative sugars (Splenda® for example)
- 1 tsp. cinnamon, can use pumpkin pie spice for something different
- Peel all the apples and cut into cubes. Next, combine the apples and sugar in a pot and turn to medium heat. The sugar will start to melt as the apples release their natural juice. Cook the apples until soft. You can use a potato masher to help breakdown the apples to the desired consistency. Next, add the cinnamon. Taste and you can add more sugar or spice depending on your desired flavor. Enjoy.

There are so many things to do with overripe bananas but sometimes I struggle with what do try next. Forks Over Knives has many healthy recipes for all your overripe bananas. I like to freeze bananas and use them in ice cream and smoothies!
Tomato Basil Pasta Sauce
Another round of fresh tomatoes from the garden today. I decided to make a fresh tomato sauce to be served over pasta tonight for dinner. I had about 4 lbs of whopper tomatoes that we picked this morning. We are also growing Genovese basil in the garden and could not wait to try my own sauce. I found this recipe and pretty much followed it as the recipe indicates. I always like to improvise and decided to add my basil in the last 20 minutes of cooking and I didn’t remove the onion. I cut them smaller when I started and let them break down naturally. It did make a nice batch so I decided to save a jar and the rest I used for the pasta. You can add anything at the end if you wanted more so I decided to add fresh bell pepper and mushrooms which I did saute first before adding to the sauce. You can serve this over any type of pasta you like. I prefer Barilla Gluten-free spaghetti. Enjoy!

Apple Pie Bake
Today was the perfect day to stay at home and do some baking. This recipe sounded so good to try and was pretty simple to make. I decided to cut this recipe in half. It also served 6 people so the nutrition information was adjusted. I also used fresh red delicious apples, as that is what I had at home. Try this for yourself or take to your next family event for a surprise treat for your guests.
